I don’t know about you, but in our family we love using Extra Virgin Olive Oil.  From a simple grilled cheese to pesto or flavored oils, we use it to elevate a variety of dishes!

I know next time we head up North, I’m going to look for the Farchioni brand – they sound amazing!  Their cold pressed olive oil has three versions:  Grezzo Naturale, Grezzo Naturale Fruttato Intenso and Biologico.  What does cold pressed mean?  It means that they are pressed without using any heat or chemicals.  To that note, you should always strive to keep your olive oil away from heat and light after you buy it.  These can compromise the flavor and integrity of the olive oil. 

Did you know that olive oil actually has a high smoke point of 400F and is safe for cooking?  Additionally, it’s great flavor is a perfect finisher for dishes as well.  We like to use more robust oils for cooking, and more delicate oils for dressings and for dipping. 

Did you know that in Europe they have been cultivating olive trees for thousands of years?  In fact, different regions even have their own distinct flavor profiles! 

• Spanish oil is typically golden yellow with a fruity, nutty flavor.

• Italian olive oil is often dark green and has an herbal aroma and a grassy flavor.

• Greek olive oil packs a strong flavor and aroma and tends to be green.

• French oil is typically pale in color and has a mild flavor.
