This past Valentine’s Day, I wanted to do something that would be fun for us as a family, so we decided to have fondue night! The recipes we used turned out really good, so I wanted to capture them here so we’d have them for next time.

Fondue is a great way to spend family time, or a fun date night.  You’re eating at a slow, relaxed pace, so there is plenty of time for conversation.  I hope you try some of these during your next special occasion!

Melting Pot Coq Au Vin Broth Clone

This broth is a clone of the basic broth used at the Melting Pot.

3 3/4 cup vegetable broth

1 1/2 cups dry white wine

4 thinly sliced button mushrooms

2 tablespoons finely chopped garlic

1-3 tablespoons finely chopped celery

1-3 tablespoons finely chopped carrot

2 tablespoons kosher salt

1 tablespoon freshly ground pepper

Pour wine and broth into a fondue pot, and then add remaining ingredients. Bring to a rapid simmer over medium-high heat. Thread a piece of meat or vegetable on a fondue fork. Cook in the broth to the desired degree of doneness. Serve with your favorite sauce.

For dippers we used mushrooms, shrimp, a bag of EatSmart veggies, and steak for my husband.

Green Goddess Dip

This dip goes well with the veggies, and is wonderful stuffed into the mushrooms!

1/2 block cubed softened cream cheese

1/4 cup milk

1/4 cup sour cream

1 tablespoon Mediterranean Seasoning Blend

2 tablespoons minced white onion

Whisk the cream cheese, milk, sour cream, seasoning and onion in a bowl until combined. You may adjust the milk to achieve your desired consistency. Chill, covered until serving time.

Caramel Toffee Crunch Fondue

We all thought this was delicious!

3/4 cup finely chopped good quality chocolate

2 ounces of Heath Bar candy pieces

2 ounces caramel sauce

2 ounces milk (add more as needed)

Combine the chocolate, milk, and caramel in a fondue pot set over low heat. Heat until the chocolate is melted, stirring constantly. Add additional milk if needed to achieve desired consistency. Add the candy pieces and stir gently to combine. Keep fondue warm over low heat. Serves two.

For dippers we used strawberries, pineapple, and bananas.

Chocolate Martini

½ ounce chocolate syrup

1 ounce chocolate vodka

½ ounce Godiva Mocha Liquor

½ ounce Crème de Cocoa

Splash of heavy cream or half-and-half

Pour everything except the chocolate syrup into a martini shaker with crushed ice.  Use the chocolate syrup to decorate a chilled martini glass with.  Shake the other ingredients well, then pour into the martini glass and enjoy!
