Holiday Entertaining with #Gardein

Gardein sent me some coupons for some free product recently – that made me happy because I just love their products! This time, I tried making something new and different. I was impressed with the chick’n strips, and will definitely be adding them to my list of items to use!

Are you looking for something quick and easy to take to a holiday party? These yummy appetizers come together in a snap!  Another thing I like about them is that they use ingredients that I typically have on hand.  Even your meat eating friends will enjoy this yummy treats made with Gardein teriyaki chick’n strips! Enjoy the leftovers with a salad for a light meal or for breakfast muffins!

Gardein Chick’n and Cheese Mini Pies

Ingredients

Chick’n-Broccoli Mixture

  • 1 tablespoon olive oil
  • 1 cup Gardein chick’n strips , cut into bite-size pieces (save the sauce pack for another use)
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup fresh broccoli, chopped
  • 1/4 teaspoon pepper
  • 1 teaspoon fajita seasoning
  • 1 C shredded sharp cheddar cheese (4 oz)

Baking Mixture

  • 1/2 cup Original Bisquick® mix
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon fajita seasoning

Directions

Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.

In nonstick skillet, heat oil over medium-high heat. Cook onion in oil 2-3 minutes, stirring occasionally. Add broccoli, chick’n, and spices ; cook 2 to 3 minutes, stirring occasionally, until mixture is heated through. Cool 5 minutes; stir in cheese.

In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 tablespoon baking mixture into each muffin cup. Top with about 1/4 cup chick’n-broccoli mixture. Spoon 1 tablespoon baking mixture onto chicken-broccoli mixture in each muffin cup.

Bake about 25-30 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.
