Now that I’m working full time, I’ve been trying to come up with some quick and easy lunch ideas. Fortunately for me, I had the opportunity to review Sabra Hummus, which I love and it gave me a great lunch idea! I love hummus – we almost always have it in our fridge, and it’s perfect for snacking or on sandwiches. For my lunch, I decided to make roasted vegetable wraps with hummus!
I got to try two of Sabra’s new flavors. The Tuscan Garden Hummus is flavored with tomatoes, red peppers, oregano, basil, spinach, and carrots. I loved the freshness of this hummus! Mediterranean food is one of my favorites, so I knew I’d enjoy this one.
I also got to try the Southwest Garden Hummus. With corn, jalapenos, black beans, and red bell peppers, it definitely gave me that Southwest flavor! I was worried that the hummus and southwest flavors wouldn’t mix well, but I thought they tasted great!
I’m pretty excited about the Buffalo Style I saw on their website! I love buffalo flavors, so that one will be right up my alley – I’ll be looking for it in the store! If you’re not familiar with Sabra – they have a unique way of doing their flavored hummus. All of the additional ingredients are in the middle, so you can have the option of mixing it all together or scooping up as much as you want. This works out well for us, since Little Miss doesn’t care for anything but plain – so she can eat the hummus and I get extra toppings!
These wraps are completely easy, and healthy as well. Take a whole wheat wrap and spread on a healthy amount of your favorite Sabra hummus.
Pile on an assortment of roasted veggies (put vegetables of uniform size in pan, coat with olive oil, and cook at 400 degrees 45-60 minutes, until lightly browned and softened.
Wrap it up and you have a delicious and healthy lunch! I like that it’s good warm or cold.
