Now that I’m working, I’m looking for things that are good for taking to work.  This burger fit the bill!  Eat it on top of a pita if you’re like me and don’t like the challenge of stuffing things into pitas, or make a salad and throw one of these babies on top of it!

The spinach lends it a slightly green color, so these would probably be great for St Patty’s day as well!   

Greek Burgers

Greek-Style Quinoa Burgers

Ingredients

  • 1/2 cup rinsed quinoa
  • 1/2 C shredded carrot
  • 15 ounces cannellini beans, drained and rinsed (or 2 C any white beans)
  • 1 C baby spinach, sliced into small strips
  • 1/4 red pepper, cut into chunks
  • 1 large egg, lightly beaten – I used egg replacer
  • 1 tsp dill
  • 1 clove minced garlic
  • 1 tsp oregano
  • 1 -2 ounces feta
  • Coarse salt
  • Ground pepper
  • 2 tablespoons olive oil
  • Dressing

  • 1/2 cup plain nonfat Greek yogurt
  • 2 T fresh dill
  • 1 clove garlic
  • 1 tablespoon fresh lemon juice
  • 4 pitas (each 6 inches)
  • 1/2 English cucumber, cut up

Directions

1. In a small saucepan, bring 3/4 cup water to a boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12 to 14 minutes; set aside.

2. In a food processor, pulse carrot until finely chopped. Add cooked quinoa, spinach, beans,  egg, dill, 1 teaspoon salt, and 1/4 teaspoon pepper; pulse until combined but still slightly chunky.  Add red pepper and stir to combine. 

3. Form mixture into four 3/4-inch-thick patties (dip hands in water to prevent sticking). If too soft, refrigerate 10 minutes to firm. In a large nonstick skillet, heat oil over medium; cook burgers until browned and cooked through, 8 to 10 minutes per side.  Can also bake at 350 for about ten minutes per side, or until warmed through.

4. Meanwhile, in a small bowl, combine yogurt, lemon juice, and the remaining scallions; season with salt and pepper. Serve burgers in pita topped with cucumber, spinach, and yogurt sauce.

Ready to go in the oven!

  1. It sounds really good, its a bit unpleasant looking before its cooked, but with all the ingredients it sounds delicious.
