Leprechaun Cupcakes

Ever since we got the Bakery Bites Express, I’ve been a little obsessed with making muffins.  I mean, who can resist tiny bite-sized muffins?  So when I saw that Little Miss was having a St. Patrick’s Day party, I knew I wanted to make green cupcakes!  However, I didn’t want that green from throwing a bunch of food coloring in….

So I was thrilled when I found this recipe for Spinach Cupcakes over at A Little Nosh!  I knew immediately these were the cupcakes we were going to make.  I told Little Miss we were making Leprechaun cupcakes.  She’s been talking about Leprechauns nonstop for the past two weeks, so I knew she’d be interested.  She helped mix the dry ingredients.

And then we stuffed the spinach (4 cups!) and some applesauce into the Ninja to make Leprechaun juice.

After a few quick whirls, we were ready to go!

Combining the Leprechaun juice with the dry ingredients gave us a beautiful green batter that Little Miss was ready to devour it right then!  I let her have a taste test, and she approved.

Then we cooked them up and ended up with beautiful mini cupcakes that are a nice green color throughout, without that artificial food coloring!  Little Miss can’t wait to frost them today!  And if you wondering, no, you can’t taste the spinach!

Leprechaun Cupcakes

Adapted from A Little Nosh

Ingredients:

  • 2 1/2 cups all purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup powdered milk (I used soy powder to make it vegan)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1 cup unsweetened applesauce
  • 4 cups baby spinach

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine all the dry ingredients in a large bowl.
  3. Puree the applesauce, vanilla, and spinach in a blender or food processor.  You may need to add the spinach in batches. 
  4. Add the spinach mixture to the dry ingredients and stir until completely combined.
  5. Bake for 18-20 minutes (for full size muffins), or until a toothpick inserted in the center comes out clean.  In the Easy Bake, this took about eight minutes. 
  6. Cool completely.
  7. Frost if you’d like and enjoy!

    Those are so cute! I’m glad you answered my question already, I was going to ask if you can taste the spinach. I’m such a picky eater, far worse than my kid, so I need people to trick me into eating healthy stuff, lol!
