Chocolate Chip Blondies

I don’t know if you noticed, but we aren’t huge dessert people in our household.  I keep my stash of dark chocolate squares, and Brian and Little Miss have been working on a huge bag of twizzlers that I won, but all in all we don’t eat a ton of sweets. (Unless it’s ice-cream, and that’s a whole other story!)

However, when I saw the recipe for White Bean Blondies on Mi Chiamo Candace, I had to give them a try!  I just happened to have some garbanzos already cooked that were leftover from something I had made earlier.  The thing that impressed me the most about this recipe was how absolutely easy it was to put together!  Little miss loved helping me whiz everything up in the food processor.


I also loved that this recipe is gluten-free, provided you have gluten-free oats.  If not, I’m guessing you could leave them out entirely.  Little Miss already loves hummus, so getting her to eat garbanzos wasn’t a huge victory.  However, it did make a great breakfast sweet – the beans made it heartier than a muffin or something, so it stuck with you longer, which is nice. 


It doesn’t spread while baking, so be sure to get it spread in the pan how you want it before you put it in the oven!  I thought the taste was amazingly good – I would have never guessed there were beans in there!  Little Miss loved them as well – this was the first time I’ve gotten her to eat coconut! 


I definitely recommend giving these tasty morsels a try!
